Ingredients for Jodhpuri Mirchi Vada
- Green chillies (larger sized) -6 (150 grams)
- Potato (boiled) – 6 (500 grams)
- Chickpea flour- 1.5 cups (150 grams)
- Green chilli (finely chopped) – 3 to 4
- Ginger baton (grated) – 1 inch
- Red chilli powder – ½ tsp
- Asafoetida – ½ pinch
- Green coriander (finely chopped) – 3 to 4 tbsp
- Turmeric powder – 1 tsp
- Coriander powder – 1 tsp
- Cumin seeds – ½ tsp
- Carom seeds – ½ tsp
- Dry mango powder – ½ tsp
- Salt – 1.5 tsp
- Baking soda – ⅛ tsp
- Garam Masala – ½ tsp
- Oil – for frying
For the batter
Take 1.5 cups of chickpea flour in a bowl and add water to it to dissolve its lumps. Give the batter a smoother texture and it should have a Pouring consistency. Add a ½ teaspoon of salt, turmeric powder, caram seeds after having crushed them, red pepper powder. Add a ⅛ teaspoon of baking soda to it and leave the Batter aside to ferment for a while.
For the stuffing
Preheat a pan, add a tablespoon of oil to it. Add a ½ pinch of asafoetida, a ½ teaspoon of cumin seeds and roast for a while. Add 6 boiled potatoes after breaking them. Lower the flame and add 2 finely chopped green peppers.
Add a ½ teaspoon of turmeric powder, a teaspoon of salt, a teaspoon of coriander powder, a ½ teaspoon of mango powder. Put the flame over medium heat, cook, mashing and stirring the ingredients.
Add a ½ teaspoon of Garam Masala, 2 to 3 tablespoons of finely chopped green coriander. Pour the stuffing into a plate and let cool.
For the Vada
Take 6 thicker green peppers, chop them and cut them slightly on one side. Remove its seeds and hollow them out. Preheat the oil in a wok to fry the Vadas. Insert a little stuffing inside the chili and coat it well with stuffing. Assemble all the peppers in the same way.
After having assembled all the peppers, lift the pepper and coat it carefully with the dough. Lift the Vada by holding its stem and add it to the wok to fry it. Properly heated oil and medium flame are required to fry the Mirchi Vada.
When frying the Vada, do not stir it at first, but sauté some oil in it using the ladle. After a while, stir and fry it for 2-3 minutes until it turns golden brown. After frying the Vada, drain it and place it on a plate. Fry the rest of Mirchi Vada as well.
After frying all the Mirchi Vada. the Mirchi Vada is ready to be served. Serve with a tomato or green coriander dip.
