Bhatura is a very popular recipe from India, it is enjoyed with Chole curry on a wide level. This Bhatura recipe is slightly unique because it is stuffed with cottage cheese.
Ingredients for making stuffed bhatura
- Refined flour – 2 cups (250 grams)
- Curd – ¼ cup
- Oil – 2 tbsp
- Sugar – 1 teaspoon
- Salt – 1 teaspoon
- Baking soda – ¼ teaspoon
- Cottage cheese – 150 grams
- Black pepper (freshly crushed) – ½ teaspoon
- Red pepper flakes – ½ teaspoon
- Coriander flakes – 1 to 2 teaspoons
- Frying oil
How to make stuffed Bhatura
Take 2 cups of refined flour in a bowl and add a ¼ cup of curd to it. Add a teaspoon of sugar, a ½ teaspoon of salt, a ¼ teaspoon of baking soda, add 2 teaspoons of oil. Use ½ cup of lukewarm water and knead the soft dough.
Apply oil to your palms and knead the soft dough. After kneading the dough, cover and let stand for 2 hours. The dough fermented after 20 minutes.
Apply dry flour to your palms and pierce the dough. Take dry flour and divide the dough into two equal portions. Again, divide its half into three equal parts. Prepare the round shaped dough lumps and divide the other half evenly into three equal parts.
Preheat the oil in a wok to fry the bhaturas. For the stuffing take 150 grams of cottage cheese and finely grate it. Add ½ teaspoon of salt, ½ teaspoon of freshly ground black, 1/2 teaspoon of coarsely ground dry red chilli and 1 to 2 tablespoons of green cilantro.
Lift a piece of dough, cover the rest of the piece of dough and coat it with dry flour. Expand it in the diameter of 3 to 4 inches and place a little stuffing on it. Lift and seal the stuffing well on all sides.
Press it down with your fingers and spread the stuffing evenly. Sprinkle it with dry flour and press again with your fingers. Expand it into the desired shape and dab it with your hands. Do not flatten it too thinly otherwise it will split.
To fry it requires extremely heated oil and a high flame as well. Add a Bhatura to fry in the heated oil and press down with the ladle. Turn it over and fry Bhatura on another side until brown. After frying the Bhatura, drain it from the wok and brown all the Bhatura in it.
The Bhatura stuffed with cottage cheese is ready to serve. Serve it with chola, curry, dip or pickle.
