Ingredients for Urad Dal Stuffed Kachori
- Wheat flour – 2 cups
- Oil – 1/4 cup
- Urad Dal (soaked) – 1/3 cup
- Asafoetida – 1/2 pinch
- Cumin seeds – 1/2 tsp
- Ginger baton (grated) – 1 tsp
- Green chilli (finely chopped) – 2
- Coriander powder – 1 tsp
- Fennel powder – 1 tsp
- Red chilli powder – 1/2 tsp
- Garam Masala – 1/4 tsp
- Dry mango powder – 1/2 tsp
- Carom seeds – 1/2 tsp
- Salt – 1 tsp
- Oil for frying
How to make Urad Dal Stuffed Kachori
Take a 1/3 cup of Urad Dal, wash it and soak it in the water for 2 hours.Take 2 cups of wheat flour in a bowl, add a 1/2 teaspoon of salt, carom seeds,a 1/4 cup of oil and mix well.
Knead the soft dough while adding more than a 1/2 cup of water in intervals.After kneading the dough, cover and keep it aside to rest for 15 to 20 minutes.After 2 hours, grind the soaked Dal coarsely ground in a grinder.
Preheat a pan, add 2 tablespoons of oil in it and heat it. Add a 1/2 teaspoon of cumin seeds, a teaspoon of fennel seeds, a 1/2 pinch of asafoetida, a teaspoon of grated ginger baton, 2 finely chopped green chillies to it on medium flame. Roast all the spices for a while.
Add the coarsely ground dal to it along with a teaspoon fo coriander powder, a 1/2 teaspoon of coarsely ground red chilli, a 1/4 teaspoon of Garam Masala, a 1/2 teaspoon of dry mango powder, salt to it. Roast while continuously stirring it on medium flame for 7 minutes.
The stuffing will be cooked after 7 minutes. Keep the stuffing aside to cool down. Mash the dough after 20 minutes and divide the dough into its lumps. Preheat oil in a wok for frying the Kachoris.
Lift a dough lump, roll it and hollow it using your thumb along with a finger. Insert a teaspoon of stuffing in it and seal it by lifting the dough from all corners. Stuff 4 to 5 Kachoris at a time.
The oil lesser heated than medium is required for frying the Kachoris. Turn the flame to low, add Kachoris for frying. Do not touch them for a while. After a while when it starts floating, flip it and fry until they appear golden brown.
After frying them golden brown, drain them out and fry the rest of Kachoris likewise. 10 to 12 minutes will be utilized to fry a round of it. Crispy wheat flour Kachori is ready to be served. Serve it along with spicy green coriander dip or any desired dip.
